In a large bowl, whisk together eggs, melted butter and milk until all combined.

In another bowl, add flour, salt, baking powder and sugar.

Sift the dry ingredients into the egg mixture.
Fry the pancakes in 1 tbsp vegetable oil or melted butter.
Serve with maple syrup, crème fraiche and blueberries.

250g self-raising flour
1 1/2 tsp baking powder
1 tbsp golden caster sugar
A pinch of salt
3 large eggs
25g melted butter, cooled
200ml milk
Makes 4 - 5 pancakes
